Brunswick Stew - Winter time favorite

Hey Friends! 

Its cold outside. NCAA National Championship tonight. Fire is roaring. Quite frankly, we could all use some comfort right now too! So, I am sharing with you my Brunswick Stew recipe and bringing comfort to our home! 

Quickly, here's what you need!

  • 28oz Diced Tomatoes
  • 2c of Lima Beans
  • 1lb of smoked chicken (cheated, store bought this one)
  • 1lb of smoked pork, pulled (smoked one today)
  • 2 cans Cream of Corn
  • 2c chopped Vidalia onions
  • Better than bouillon - Chicken Flavor (3c of liquid mixture) Chicken Stock
  • 3 garlic cloves diced
  • 4c chopped white potates
  • stick of butter
  • 1/4c brown sugar
  • paprika
  • cayenne pepper
  • worcestershire sauce
  • 3c of favorite BBQ sauce(mine is homemade) 
  • salt, pepper,

  • Begin by melting the stick of butter, add the onions and cook until soft and translucent. Add garlic, cook for a couple of minutes. 
  • Add potatoes, limas, tomatoes, corn, chicken, pork, 3c mixture of Chicken Stock. Bring to a low boil, cook for 20-30 minutes, stirring occasionally
  • Add BBQ sauce, brown sugar, salt, pepper, paprika, cayenne, Worcestershire sauce. Simmer, stir and cook for 30mins without lid

 

  • I like mine to cook for a few hours, sit overnight, reheat and eat the next day but who has time for all that? 
  • Once this has been cooking for an hour, I will mix my cornbread, preheat the oven with my cast iron in the oven. Don't forget the tablespoon of white sugar in your cornbread, you can thank me later!
